My Healthy and Delicious Version of Scrambled Eggs on Toast

Scrambled eggs on toast. What a dream. I had a craving for it, but I wanted to take the simple recipe up a notch. This “toast” is DELICIOUS. It is not so hard to make, nutritionally dense, filling, and bursting with flavor. I would eat this meal for breakfast lunch, and dinner (kind of want to)! Follow the recipe below and enjoy!

There are three components to this recipe, but do not be deterred! They are all very easy steps, and when you take your first bite you will see they are worth it.

Time: 7-10 minutes

The Toast

  • Two thin slices of sweet potato
  • Coconut oil spray or other cooking spray
  • Directions
    • Spray both sides of the slices
    • Pop ‘em in the toaster and toast until they are fully cooked
    • *this may take a few rounds, but you can do it!

The Avocado

  • ½ avocado
  • Lime juice
  • Black pepper
  • Cayenne powder
  • Chili lime powder
  • Directions
    • Smash that ‘cado
    • Add the spices

The Scrambled Tofu

  • Turmeric
  • Black pepper
  • Cayenne pepper
  • Avocado oil
  • Directions
    • Dry the tofu with paper towels
    • Smash with a fork
    • Mix in avocado oil and spices
    • Spray a pan with cooking spray and cook tofu until it begins to brown

Optional toppers

  • Red pepper flakes
  • Lime juice
  • Capers
  • Red onion


  • Smother the toasts with guac
  • Pile with tofu
  • Top if you wish!
